The answer to that is whatever fills the yardage you're trying to cover.  It really doesn't matter what degree is on the club as long as it goes the appropriate distance the shot calls for.

My set of AP2 714's are 1* strong, so the W-wedge (gap wedge) is 49* instead of 50*.  I use a 54* and a 60* to round-out the rest of my wedges because that is what fills the gaps and suits my game play.  Traditionally you want 10-15 yard gaps between clubs but the wedges are different in my opinion because you want them to fill the "finesse" part of the game.  You need to establish what shots you hit primarily inside of 100-110 yards: how you would like to play those shots (i.e. low spinner, high & soft, etc.), rough around the greens, bunkers hard or soft, tight lies or soft spongy lies.

The SM5 have many numerous bounce options for conditions that you will want to try before you buy.  A fitting would be great if you have a fitting center close to you but if you don't then you should assess what lies and shots you hit most often and play to your strengths...

I use a 54 and 58 degree.

My 714 AP2 PITCHING wedge is set at 44*, then I have a SM4 50* and SM5 56* vokey wedges.....NO 60* for me.....I hit to my distances at my age (soon to be 68) and if I need a shorter wedge, which I avoid, I just choke up a little on my 56* and it works as well......my AP2s are set 5-7 (3* difference), 7-PW (4* difference), PW-56 (6* difference)......910 Driver (10.25*), 913 Fairway (14.25*), 17* 913 HYBRID, 21.5* 910 HYBRID, 24* 913 HYBRID......this works for me.......know I went a little beyond the AP2S.....BUT tried to match everything up for distancing....of course all Titleist clubs, what else is there....cheers....:-) 

I also play Vokey 54 and 58 degree wedges with my AP2 714 irons.

Did you go with the same shaft.  I got the kuro kage 65 shafts on my irons and love them.

I am playing the XP95 s300 shafts on the AP1s and the standard s200 shafts on the Vokeys......

It really depends on how you use the gap wedge. If it is a primarily a full shot club then yardage gaps are important. 

I have Ap2's and my PW is 2 weak at 48, I then have a high bounce 54 degree SW and a 58.09 LW

the 54 and 58 are my speciality clubs with varied bounce for those shots around the green.  I will bump and run with the 48 or more often my 9 iron. My 9 iron is 1 weak at 43. Works well for me. 

I believe you have to look at the distance gapping in your bag and find what fits best.  For me, the AP2 gap wedge is a full shot club with a standard yardage of 120 yards.  I go down to a 56 degree Vokey, bent to 55 degrees and then down to a 60 degree Vokey.  Bending the 56 strong to 55 degrees kept the yardage gaps consistent for full shots.  I can then dial back the 55 Vokey as necessary for shorter distances.  Get with a fitter and a launch monitor and set these clubs up so you can hit any distances that may be required and proper gapping.

I don't have the A wedge. I have the PW (47*), and then have 3 Vokey SM5s in a 52*, 56*, and 60*. That gives me a gap between the PW and the 52* of 5* and then a gap of 4* between the others. 

It works well for me and have seen a lot of other people with a similar setup. You could also bend the A wedge to be a degree stronger to be 51*, for example, but depends on your game and the distances you need filled. I would look at that before doing anything.
